Winter Vegetable Soup

This wonderfully healthy vegetable soup hits the spot on those cold winter days.

2 medium onions, chopped
3 large carrots, chopped
3 stalks celery, chopped
2 large potatoes, diced
1/3 cup flour
3 tablespoons butter
2 12 oz cans v-8 vegetable juice
2 cups water
salt and pepper to taste

Directions

Combine all ingredients in crock pot. Cook on low 6 - 8 hours.


Per Serving (excluding unknown items): 162 Calories, 6g Fat (32.4 percent calories from fat), 3g Protein, 25g Carbohydrate, 4g Dietary Fiber, 16mg Cholesterol, 509mg Sodium. Exchanges: 1 Grain (Starch), 2 1/2 Vegetable, 1 Fat.
