Extraordinary Baked Beans

These baked beans are extraordinarily easy to make. These will be the
highlight of any potluck dinner.

This recipe was adapted from a recipe handed down to me by my mother
who used to slow cook this in an oven at 250 degrees all day long.
1 pound small dried white beans
1 teaspoon salt
2 cloves garlic, peeled and minced
2 tablespoons mustard
1 teaspoon thyme
1/2 teaspoon pepper
6-1/2 cups water
1 pound bacon, cut into 1 inch strips
1/4 cup brown sugar
1/4 cup ketchup
1 teaspoon ginger
Directions
Combine all ingredients and place in crock-pot. Cook on low heat for 8 to 10
hours.
