Crock-pot Curried Chicken

Chicken and rice smothered in a delightful curry sauce. This is one you

1 1/2 cups converted white rice
3 1/2 cups boiling water
1 onion, quartered and thinly sliced
2 1/2 tsp. curry powder
1/4 tsp. of each of the following:
turmeric
cayenne
salt
garlic powder
1 pound chicken breasts
Directions:
In a 4- or 5-quart slow cooker, mix together all ingredients. Cover and cook
on the high heat setting 1 hour. Reduce the heat setting to low and cook,
covered, 2 1/2 to 3 hours longer, or until the rice is tender and the
chicken is cooked through. Serve with shredded coconut, raisins, pineapple
chunks, and Spanish peanuts.
