I love leisurely drives on Sundays after we go to church. But by the time
I get back I am starving and don't really feel like cooking. This is the
perfect dish for those days.

1 1/2 lb stew beef - cut into small pieces
1 medium onion - diced
4 large carrots - chopped
4 large potatoes - sliced
1/2 teaspoon lemon pepper
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon cornstarch
1 (12 oz) can V-8 juice
Preparation
Place the stew beef in the bottom of your slow cooker. Layer the onions,
carrots and potatoes on top of the beef. Sprinkle with the lemon pepper,
salt, sugar and cornstarch. Pour V-8 juice over everything. Cover and cook on
the low setting for 8 - 10 hours or on the high setting for 6 hours.
For a slightly different taste use brown sugar and Clamato juice.
